THE FLAVOUR JOURNEY

More than a recipe. A living tradition.

From a hot dosa to the crackle of curry leaves, food carries memories of places, people and everyday rituals.

CHAPTER 01

The story begins with the land

Karnataka is not one single cuisine. Rice and lentils shape many meals in the south; jowar rotti, brinjal preparations and peanuts have long been important further north. Along the coast, coconut, seafood and rice-based dishes lend a different rhythm to the table. Every region tells its own story.

CHAPTER 02

The patient art of the dosa

The dosa we love emerges from a deceptively simple process: soaking rice and lentils, grinding them into batter, letting time and fermentation develop flavour, and spreading the batter over a hot tawa. Crisp edges, a tender centre and a good chutney make each bite memorable. Claims about one single birthplace for every dosa style are disputed; Udupi and Mysuru are among the important places in its culinary story.

CHAPTER 03

Oggarane: the little burst of flavour

A spoonful of hot oil or ghee, mustard seeds that begin to pop, fragrant curry leaves, chillies and other spices: oggarane, or tempering, changes the aroma of an entire dish. In many Karnataka homes, this finishing or foundational step brings character to saaru, palya, chutney and comforting everyday food.

CHAPTER 04

Slow comfort in a single pot

Bisi bele bath is part of the Bengaluru–Mysuru food memory: rice, lentils, vegetables, tamarind and a warming spice blend coming together in one hearty meal. Ragi mudde, saaru and seasonal vegetable dishes show another side of the region — nourishing everyday food created for the household table.

CHAPTER 05

From the kitchen to a shared table

Food traditions survive through the small things: learning to judge a hot pan, tasting and adjusting seasoning, preparing accompaniments, and serving a meal with care. These are general culinary traditions, not a claim that we have documented every practice inside Mane & Oggarane. Our own kitchen’s real footage and behind-the-scenes stories can be added as they become available.
